Soften 3 sliced garlic cloves in 30 g (2 tbsp) butter, add a 400 g (14 oz) tin of white beans with a splash of their liquid, simmer 5 minutes, crush a third of them, finish with lemon and parsley. Serve on toast with a fried egg. 12 minutes.

2. Sheet-pan sausages, peppers and potatoes

Halve 400 g (14 oz) baby potatoes, toss with peppers, onion, olive oil and paprika. Roast at 220°C (425°F) for 15 minutes, add sausages, roast 15 more. 35 minutes, 5 of them yours.

3. Coconut chickpea curry

Fry 2 tbsp curry paste for a minute, add a 400 ml (14 fl oz) tin of coconut milk and a drained tin of chickpeas, simmer 10 minutes, stir in two handfuls of spinach. Rice or naan. 15 minutes.

4. Tuna, lemon and chilli pasta

While 200 g (7 oz) pasta boils, warm tinned tuna in olive oil with garlic, chilli flakes and lemon zest. Toss with a ladle of pasta water. 12 minutes.

5. Loaded baked sweet potatoes

Microwave 2 sweet potatoes for 8–10 minutes, then crisp them 8 minutes at 220°C (425°F). Top with black beans, feta, yoghurt and hot sauce. 20 minutes.

5 dinners for when you want something that feels cooked

6. Chicken and broccoli stir-fry

Slice 400 g (14 oz) chicken thigh thinly. Sear hard, remove, cook broccoli and peppers 3 minutes with a splash of water, then return the chicken with 3 tbsp soy, 1 tbsp honey, garlic and ginger. 20 minutes.

7. Lemon herb salmon traybake

Salmon fillets on a tray with courgette and cherry tomatoes, olive oil, lemon. 200°C (400°F) for 12–14 minutes, until the fish flakes and reaches 63°C (145°F) at the centre. 20 minutes.

8. Turkey mince chilli

Brown 500 g (1 lb) turkey mince with onion, add cumin, smoked paprika, a tin of tomatoes and a tin of kidney beans. Simmer 15 minutes. Better the next day. 25 minutes.

9. Greek-ish chicken bowls

Chicken strips with oregano, garlic and lemon in a hot pan, served over rice or orzo with cucumber, tomato, olives and a yoghurt-lemon sauce. 25 minutes.

10. Mushroom and spinach rice

Not a real risotto: fry mushrooms hard, add cooked rice, a splash of stock, spinach and a big handful of parmesan. Creamy in 10 minutes. 15 minutes.

5 meat-free dinners nobody complains about

11. Crispy gnocchi with tomatoes and basil

Pan-fry shop-bought gnocchi in oil until golden, add halved cherry tomatoes and garlic, squash them into a sauce, finish with basil. 15 minutes.

12. Egg fried rice with frozen peas

Day-old rice, hot pan, eggs scrambled to the side, peas, spring onion, soy and sesame oil. 10 minutes.

13. Lentil and tomato soup with feta

Onion, garlic, 150 g (3/4 cup) red lentils, a tin of tomatoes, 750 ml (3 cups) stock and cumin. Simmer 20 minutes, blend half. 25 minutes.

14. Halloumi and couscous salad

Couscous soaked in boiling stock for 5 minutes; fried halloumi, cucumber, tomato, mint, lemon and olive oil. 15 minutes.

15. Black bean quesadillas

Mash beans with cumin and lime, spread on tortillas with cheese and sweetcorn, toast in a dry pan 2 minutes a side. 12 minutes.

How to make these repeatable, not just tonight

Pick five of the above and rotate them for two weeks. Same shopping list, almost no decisions. Write the five on the fridge — the point isn't variety, it's removing the 6pm question entirely.
