4. Turkey and Black Bean Chili (Dinner)

Ingredients (6 servings):
- 900g / 2 lbs ground turkey
- 2 cans black beans, 1 can chopped tomatoes, 1 can corn

- 10 eggs
- 2 cups (60 g) baby spinach, chopped
- 100 g (3.5 oz) feta, crumbled

Method: Whisk the eggs, fold in the vegetables and feta, pour into a greased muffin tin, and bake at 180°C / 350°F for 18–20 minutes. Two muffins make a solid grab-and-go breakfast; reheat 30 seconds in the microwave.

Ingredients (4 servings):
- 600 g (1.3 lb) chicken breast, sliced
- 1 broccoli head, 1 bell pepper, 2 carrots, cut into strips
- Sauce: 4 tbsp peanut butter, 4 tbsp soy sauce, 1 tbsp honey, juice of 1 lime, 1 clove garlic, splash of water
- 2 cups (370 g) cooked rice
Method: Sear the chicken in a hot pan, add the vegetables for 3–4 minutes (keep them crisp), then stir in the sauce until glossy. Serve over rice. Slightly undercooking the vegetables is the trick — they finish softening when you reheat.
7. Lentil and Vegetable Soup (Lunch)
Prep: 10 minutes · Cook: 35 minutes · Keeps: 5 days, freezes for 3 months · Vegan
Ingredients (6 servings):
- 2 cups (400 g) red lentils, rinsed
- 2 carrots, 2 celery stalks, 1 onion, diced
- 1.5 litres (6⅓ cups) vegetable stock
- 1 can chopped tomatoes, 1 tsp cumin, 1 tsp turmeric
Method: Soften the vegetables in a little oil, add everything else, and simmer 30 minutes until the lentils collapse. The most forgiving recipe on this list — and the cheapest per bowl.
